engine height offshore 24

i just bought a 300 hpdi, however it is a 30" shaft. the boat is set up for a 25" motor. i put a maunaul jackplate on the gil bracket. to compesate. what i am wondering is where should the covitation plate be in reference to the bottom of the boat. i raised the motor exactly 5 inches however i always thought the motor set too low anyway. it also seems like the engines on my sailfish sit higher than the one on the offshore. thanks for the input
