What length hose do we need? See 8' and 10' options. for the assembled fuel line. Anyone replaced one that could help? Don't want to order the wrong size?

Which line?
Tank to primer bulb?
Tank filler hose?
If tank pickup 8 feet is definitely too short. 10 feet is probably too short also
I recently replaced mine (2001 hull) and to be honest, the first length that I tried was too short. I typically order a spool of 25 feet and whatever is left over, gets used later.
If you try to calculate the length by estimating the run, you may under estimate because the routing is longish.
The hose from the tank pickup routes around the fresh water coffin area and is clamped to the side of that area. ( you may need to remove that deck lid) From there is routes along the back inside transom to the fuel separator bracket. Then the line runs all the way from the filter bracket to the opposite side into motor well to the primer bulb.
Note that the hose from the tank to the primer bulb is 3/8 in ID but the line from the primer bulb into the motor is 5/16 in ID.
