Skin on or off

Hey Yall:
To anyone catching dolphin and wahoo....are you are a skin on the grill cook or are you peel the skin off the fish before you grill?

Me, sometimes I am both....I find leaving the skin on the fish it does not dry out as quick when grilling it.

Skin on. After cooking on the grill just slide the meat off with a spatula. The skin holds the meat together better than if it's removed.

whats really hard is listening to you warm weather guys talking about fresh fish grilling while we up in the north are still under shrink wrap.... :lol:

skin on, with a clean and well oiled grill grate

Richie Rich agree - Skin on - cooked on the BBQ with some lemon and garlic.
30 degrees Celsius at my place today, unfortunately boat (GW258) is still on ship from US and arrives in a few weeks. Will be straight into some action mid April!!
