Wood - wood indeed requires epoxy.wood needs to be sealed ,polyester resin isn’t waterproof.
Gel coat will adhere just fine to epoxy, you need a separation coat of vinylester - duratec surfaced is the product to use.
A much better choice for that recore would be nidacor / honey comb core.this is super light and strong - it’s a composite so it will never go bad.composites are easily laminated with polyester products. To laminate nidacor / honeycomb core - wet everything out, put down 2 layers of 1.5oz chop strand, wet it out, wet the core lay it in place and put some weight on it.
