I have a GoPro Hero 3+. Kind of old now but works great for fishing video. I wouldn't worry about too many bells and whistles because you won't have time or brainpower to use it all.
If I needed another, I would get a simple one.
I set it to superwide 1080 and never change it. It gets everything just by pointing in a general direction.
I don't use the video viewer or bluetooth. That saves battery.
I have had a GoPro for years, but barely use it. I bought a waterproof point and click recently and started using that more and use my phone with the DJI Osmo gimbal.
