Actually my 272 engines would not trim out of the water 100%. A tiny bit of the skeg was always submerged. I have seen many boats like this of various brands. I always assumed it was normal.

Main concern here is his intakes are underwater, not "a tiny bit of skeg".

On my 275 GW has authorized the dealer to relocate the running and stern lights (the reason is long and involved and not worth explaining) so that the stern light bracket can be eliminated and the engine can be lifted out of the water. GW is checking now to confirm that once the bracket is removed that in fact the engine will have the room to lift fully out of the water.

GW's initial response to the bullet in the water was this is NBD after I wrote GW through the dealer to disagree and pointed out that if it were just the bullet underwater I would not care but the second water pick up is underwater and that is a potential long term problem. I gave them the option to put into writing that it was ok for the bullet and pick up to be underwater for the long term. They came back with the solution to relocate the lights on the boat and get ride of that stupid stern light design. I will post photos when it is done. In short GW has come through with a fix for the 275 at least.
