I have a 1985 offshore pro with a 100 gallon tank I need 50 more, should I add an aux tank or just go for a single 150 gal?

I would ask what the cost differential is between the two options

That will also depend on the condition of the 100 gal tank you have now.
Very much so.

For all the work required, I would go for a bigger tank but do some research about how that would fit and what structural changes might be needed. For example, bulkheads may need to be removed, modified and/or added

I see that your filler hoses run in opposite directions. Do you have fill and vents on both and starboard gunnels?

If you're talking to me, you need to look closer. Both run same direction, to starboard side gunnel.

I had a 1985 24 offshore. I went from a single 200 to twin 150’s and added the extra 50 and also put a 20 gallon freshwater tank in that hold also.

I like the 2 tanks. One big one could have issues managing the weight distribution when less than full. I'd do the 100 gal tank while there as well.
