Steering wheel or helm extension

I have a 1989 Grady White Trophy Pro 25' with twin 200 Johnson. I have been restoring this boat for the past 3 years. I had a hydraulic leak in my seastar helm which was the front seal. When I removed the steering wheel I could not remove the front plate to replace the seal due to a extension on the shaft. the extension which screws onto the helm shaft then held by two allen screws had seized up and would not unscrew from the helm shaft. I had to cut or split the extension in order to get it off the helm shaft. Now I need a new extension. Without it the steering wheel sits to close to the dash and the port control will not go into reverse without hitting the steering wheel. Attacked are photos, I called Seastar and they did not think it was something they would have made or sold. Thank you for any help you can offer.

Can you re-mount the steering on a block of starboard bringing it out away from the console enough to clear the throttle arc?
