Hard to pick favorites but here goes...

Mahi Mahi aka Dorado aka Dolphin.... the best grilled fish there is IMHO...Soy sauce, garlic powder, ginger, seasame seeds, lime juice.... grilled with mesquite wood chips..on a fresh roll (toasted on the grill) with a real summer Jersey tomato and spinach....And a Summer Ale........Its SUMMER on a Bun!

Bluefin tuna, seared ...or not... with soy sauce & wasabi, cucumber...

Yellowfin Tuna...great seared on the grill...here its a side salad to a mahi sammich...with sesame ginger dressing...Italian dressing works great too. (Substitute YFT with Wahoo aka Ono whenever possible)

Striped bass

All fantastic!...with a side of deep fried peirogies

Re post of my ceviche recipe:

1 pound diced fish
1 pound bay scallops
1 pound shrimp
8 limes juiced (or preferrably 12-14 key west limes)
1 mandarin or Sumatra orange juiced
1 chopped red onion
2 avocados
1 large diced mango
1 bunch chopped cilantro
8 cloves minced garlic
2 Serrano peppers finely chopped
salt & pepper to taste

I needed new ways to eat tuna...

I went Italian on some yellowfin. A mix of corn meal fish fry breading and Panko crumbs with Italian seasoning. Pan fried in butter.

And then I did the deep fried nugget thing without the Italian seasoning. Also some rice balls and dumplings. Soy sauce & wasabi...

I have to say that adding crunch to the tuna is AWESOME!!!!! Just cook the breading fast, not the fish!


I have also been making Ahi Poke bowls but I don't have any pix

Skunk, so tough to realize your house is so far from mine. Not sure how you feel about self invites, but those tuna dishes could make a man forget about a closed border and head your way for just a taste!! Looks Great!!!
