I am looking to add some spray wings to my 306 CC. I've looked online but no OEM canvas shops are making Grady canvas until next year. I've gotten some prices locally but they are all over the place. I've seen anywhere from $1200 to $2000.

What should I be seeing for a general cost on this? I know the console sides and wings go for 4k online. What should I be seeing for these 2 wings?

I just had that done for my little 23 foot CC. I used a local custom shop. He is a one man band. He comes out to your boat and talks it over with you, makes some sketches, takes some measurements and calls when he's done. I wanted wings to the outside of the gunnels and zippered sections so I could chose how far they go back depending on the crew size and wind direction. The job included a full console cover and a bench seat cover. He used heavy weight Sunbrella, #10 zippers, a roll-up smile in the front clear, roll-up straps for the mid section and install by sliding an awning welt into the existing awning rail on the top. It cost $2200.

Wow nice work. Thats way more canvas than i need. I know the grady console (2 sides, windshield top, and 2 wings) goes for $4000, so $2000 for the wings in nuts. The other shop at $1200 makes more sense. Sounds like a fair number i think.

If you know someone with a decent sewing machine you could do it for a few hundred dollars of materials and the cost of a boat ride for their labor

You definitely need a "decent" sewing machine if you are going to use Isinglass. I used a cheap Singer to make all of the canvas pieces, but once I started in on the windows penetrating that material was a show stopper. Hello Sailrite machine. Still cost a fraction of what hiring the job out would have...
