weight of a 205 freedom on trailer

I have a 2016 205 freedom. I am planning on buying a trailer for it this spring. I am also having to buy a tow vehicle. As close as I can figure the boat will weight slightly over 4000# with fuel and equipment and I am guessing that the trailer will be around 1000#. This puts me slightly over 5000# for the whole rig. Most of the mid size SUVs are rated for a max of 5000# so I am trying to confirm my numbers before I rule out mid size SUVs.

The hull weighs 2800 or so , add about 550 for motor unless you got a new 4 cyl inline. That weighs less
full tank of gas, about 430 lbs. We are at 3800. Your estimate of 4000 is good and the trailer will weigh 1000 to 1200 lbs.
Usually, the guideline is to limit tow weight to 80 or 85% of limit so yes you are over the recommended load.
Remember too that the towing limit also includes the carried load in the truck so moving gear from the boat to the car doesn't help. In addition if you are going to be carrying passengers, that counts too.
On the other hand, if your towing is local and short distances, you may be OK, just limit how full the tanks are, both gas and water (if you have that option).
In general though, the more towing capacity, the less the load on the drivetrain and cooling system.

My 205 Tournament (now Freedom) sat on a Continental aluminum tandem with a 5000 capacity (6000 GVW).

I may have had a couple hundred lbs to spare, but not much. You need at least 5000 lbs capacity.
